2023年夏天,業(yè)主經(jīng)友人引薦聯(lián)系到我們,希望委托我們將“五大道”內的一座老宅改造為高端素食餐廳。這是一座擁有近百年歷史的三層建筑,與民園體育場、慶王府等地標建筑相距僅數(shù)百米。建筑南、北各有一道入戶門,且兩道入戶門前均有一方荒廢已久的庭院。由于屋主更迭,建筑經(jīng)歷過多次改造和加建,結構形式錯綜復雜,房屋內高差隨處可見。木質樓板年久失修,結構方面亟需加固,隔音問題也需要解決。三層局部空間為原屋主加建部分,屋頂漏水嚴重。同時,原有建筑并非為商業(yè)用途所建,房間分隔零碎,層高不足,采光受限,壓抑逼仄。
In the summer of 2023, the client contacted us through a friend's recommendation, hoping to entrust us with the renovation of an old house in the "Five Avenues" area into a high-end vegetarian restaurant. This is a three-story building with nearly a century of history, located just a few hundred meters from landmark buildings such as the Minyuan Stadium and the Prince Qing's Mansion. There is an entrance door on the south and north sides of the building, and both entrances are preceded by courtyards that have been neglected for a long time. Due to changes in ownership, the building has undergone multiple renovations and additions, resulting in a complex structure with visible height differences throughout the interior. The wooden floors are in disrepair, and the structure urgently needs reinforcement, as well as solutions for soundproofing issues. The partial space on the third floor is an addition made by the original owner, with serious roof leaks. Additionally, the original building was not designed for commercial use, with fragmented room divisions, insufficient ceiling height, limited natural light, and a generally oppressive and confined atmosphere.
作為一家高端素食餐廳,業(yè)主要求設置獨立的接待廳、茶室、開放就餐區(qū)、包房,以及一個可用于雅集活動的多功能空間;同時,還需要預留長度不小于8米的茶飲操作臺及面積不小于20平方米的廚房,且每層都要設置衛(wèi)生間。
As a high-end vegetarian restaurant, the client requested the establishment of an independent reception hall, tea room, open dining area, private dinning rooms, and a multifunctional space suitable for cultural salon. Additionally, a tea preparation counter with a length of no less than 8 meters and a kitchen with an area of no less than 20 square meters are required, and bathrooms must be installed on each floor.
由于施工預算有限且業(yè)主希望項目盡快開業(yè),對建筑主體進行最小程度的改造似乎成為了一種必然選擇。于是,如何在現(xiàn)實的困難面前,通過對室內空間進行梳理重構,實現(xiàn)業(yè)主對項目的憧憬,并為客人提供良好的空間體驗,便成為此次設計工作的最大課題。
Given the limited construction budget and the client's desire for a quick opening, minimizing alterations to the building's main structure appears to be a necessary choice. Therefore, the primary challenge of the design for this project is to address the practical difficulties by reorganizing and reconstructing the interior spaces to fulfill the client's vision and provide guests with a enjoyable spatial experience.
中國素食文化歷史最早可追溯到西漢時期。據(jù)《東京夢華錄》記載,宋朝時隨著生產(chǎn)力和經(jīng)濟水平的提高,面向大眾的素食餐廳應運而生。食素是中國人對養(yǎng)生修行、仁愛貴生理念的表達,體現(xiàn)了對自我以及世界的關懷,是另一種形式的返璞歸真。
The history of Chinese vegetarian culture can be traced back to the Western Han Dynasty. According to the records in "Dreams of the Eastern Capital" during the Song Dynasty, with the improvement of productivity and economic level, vegetarian restaurants catering to the general public emerged. Vegetarianism is an expression of the Chinese people's pursuit of health and spiritual cultivation, as well as their love and respect for life. It reflects a caring for oneself and the world, representing a form of returning to simplicity and nature.

"Plant bamboo in front of the window, and use pear trees to create a courtyard; enjoy the gentle moonlight and the rustling sound of the wind. 在繁忙的都市生活中,覓得一處安靜閑適的凈土尤其難得。我們希望通過和業(yè)主的共同努力,以餐食和空間為載體,為每一位客人提供遠離喧囂,享受自然饋贈的恬淡雅致的體驗。此外,莘野佚筑也將此次設計工作作為一次園林營造實踐,希望探索在當代語境下傳統(tǒng)園林藝術的表達方式,旨在通過對物理空間的營造,傳達東方美學之韻。
In the busy urban life, finding a quiet and comfortable retreat is especially rare. We hope to work together with the client to provide every guest with a tranquil and elegant experience, away from the hustle and bustle, and to enjoy the gifts of nature through food and space. In addition, our team also regards this design work as a practice of garden creation, hoping to explore the expression of traditional garden art in the contemporary context. The aim is to convey the charm of Eastern aesthetics through the creation of physical spaces.
空間梳理
Spatial Organization
通過走訪相鄰建筑并與結構師溝通,在確保結構安全的前提下,我們決定打開一層空間作為開放就餐區(qū),并設置茶飲操作臺,拉近茶藝師與客人的距離;將靠近后街的庭院封閉作為廚房,并預留后勤出入口;在臨近主街一側的小房間增加開窗,作為獨立的茶室;利用夾層和二層現(xiàn)有房間作為包廂;將三層現(xiàn)有面積最大的房間作為多功能活動空間,并設置貫通建筑的餐梯,方便后期運營服務。
After visiting the adjacent buildings and consulting with structural engineers, we decided to open up the first floor as a dining area while ensuring structural safety. We also set up a tea preparation counter to bring the tea artist closer to the guests. The courtyard near the back street was enclosed to serve as the kitchen, with a logistics entrance reserved. A small room adjacent to the main street was given additional windows to function as a private tea room. The mezzanine and second floor rooms were utilized as private dining rooms. The largest room on the third floor was designated as a multifunctional activity space, and a food lift was installed to facilitate operational services.

在溝通方案的過程中,業(yè)主向我們提出希望擁有一扇融合品牌元素的大門。在了解品牌的文化背景后,我們決定設計一扇獨特的“緗葉門”。
During the process of discussing the design, the client expressed a desire for a gate that integrates their brand elements. After understanding the cultural background of the brand, we decided to design a unique "Xiang Ye Gate".
我們希望此處的門不僅作為物理意義上的內外屏障,更像是一種象征,隔開的不僅是街道,更是塵凡。涓涓流水、幾尾緋鯉、疊石綠蔭……門內庭院雖不大,但意趣盎然,是每一位訪客進入餐廳的前奏。伴著水聲,踏過庭院,心也慢慢安靜下來,仿佛在門的開合之間,身心經(jīng)歷了從現(xiàn)實到莘野的旅行,而門上葉片形狀的開口即是連結兩者的橋梁。
We hope that this gate serves not only as a physical barrier between the inside and outside of the property but also as a symbol, separating not just the street but also the mundane world. A gentle stream, a few red koi, stacked stones, and greenery shade... Although the courtyard inside the gate is rather small, it is full of charm and serves as a prelude for every visitor entering the restaurant. Accompanied by the sound of water, stepping through the courtyard, the mind gradually calms down. It feels as if, with the opening and closing of the gate, the body and mind have traveled from reality to the tranquility of the secluded retreat, and the leaf-shaped opening on the gate is the bridge connecting the two.

"Creating a garden involves three realms, and the difficulty and quality of a garden can be judged by these levels. First, the layout should be appropriately sparse and dense; second, the design should be arranged with twists and turns; third, there should be beautiful scenery in view through each step."

正如《林泉高致》中所著“自山前而窺山后,謂之深遠。”這里的“深遠”強調了一種窺看洞察的空間關系。由于現(xiàn)狀建筑面積有限且分隔零碎,我們希望通過增加轉折的方式拉長動線并將一個個小空間進行串連,以增加訪客的游覽體驗。同時,在客人所經(jīng)之處鑿壁借景,使空間前后掩映、張弛有度、可望可即,讓訪客保持對空間的探索和好奇。
Just as described in "The Sublime of Forest and Spring", "gazing from the front of the mountain to the back is called depth and far-reaching." Here, "depth and far-reaching" emphasizes a spatial relationship of peering and insight. Due to the limited and fragmented existing spaced, we aim to elongate the circulation and connect small spaces by adding twists and turns, thereby enhancing the visitor's experience. At the same time, we create “borrowed views” through walls along the guest's circulation, allowing the spaces to be interwoven, balanced, visible and accessible, maintaining the visitor's curiosity of exploring the space.
材料性
Materiality
室內空間摒棄繁復的裝飾,取而代之,我們將《夢梁錄》所著四般閑事——“燒香”“點茶”“掛畫”“插花”的元素融入設計,使空間呈現(xiàn)出靜謐雅致的東方美學氛圍。檀香連接嗅覺,餐食溝通味蕾,身居素雅質樸的環(huán)境中,輕撫溫潤的老物,伴著窗外幽幽鳥鳴與流水聲,五種感官在此刻達成共鳴。
The interior space eschews elaborate decorations. Instead, we incorporate elements from the four leisurely pursuits described in "Meng-Liang-Lu" — "burning incense," "brewing tea," "hanging paintings," and "arranging flowers" — into the design. This creates a tranquil and elegant atmosphere of Eastern aesthetics. Sandalwood connects with the sense of smell, while food communicates with the taste buds. In this simple and unadorned environment, one can gently touch the warm, aged objects, accompanied by the faint chirping of birds and the sound of flowing water outside the window, achieving a harmony of the five senses.
毛石、藤席、老木、織布、黑銹板……材料自然質樸,帶有斑駁的時間感和手工痕跡,賦予物理空間以時間屬性,將人們的注意力拉回當下,聚焦于居于此間的人、事、物,感悟“清閑無事,坐臥隨心,雖粗衣淡食,自有一段真趣”的心境。
Rough stone, rattan mats, aged wood, woven fabrics, and blackened steel boards... The materials are natural and rustic, bearing the marks of time and craftsmanship. They imbue the physical space with temporal attributes, drawing people's attention back to the present moment and focusing on the people, events, and objects within this space. This allows for an appreciation of the state of mind described as "leisurely and carefree, sitting and lying as one pleases, even with simple clothes and plain food, there is a genuine charm."
形式的隱喻與多義
Metaphor and Polysemy of Form
在第一次進行場地踏勘時,我們發(fā)現(xiàn)現(xiàn)狀建筑北側夾層有兩組“L”形的轉角窗。通過觀察,我們發(fā)現(xiàn)不同于普通窗洞的二維框景效果,轉角窗似乎傳達出了一種立體的空間屬性,這為我們提供了一個思路。于是,在進行室內設計時,我們將傳統(tǒng)的屏風家具與轉角圖形相結合,形成轉角屏風語匯,并分散于不同空間之中,起到延展空間的作用,同時也成為統(tǒng)一空間氛圍的線索。
During the initial site survey, we observed two "L"-shaped corner windows on the north side mezzanine of the existing building. Unlike the two-dimensional framing effect of ordinary window openings, the corner windows seemed to convey a sense of three-dimensional spatial properties, providing us with an inspiration. Consequently, in the interior design, we combined traditional screen furniture with the corner shape to create a corner screen element. These screens were dispersed throughout various spaces, serving to extend the spatial perception and also acting as a unifying element for the spatial atmosphere.
除此之外,我們還在室內設計中植入了一套木構語匯。它既是對傳統(tǒng)建筑結構的隱喻,同時也承擔了分隔空間作用。此外,木構件本身也被賦予了實用意義:照明線路的集成,推拉移門的軌道,商品展架的結構等。三層的多功能空間由于層高較低,略顯壓抑。我們將木構語匯與鏡面材料相結合,消解人們對空間邊界的感知。步入其中,虛實交錯之間,仿佛理想與現(xiàn)實達成了和解。
In addition to this, we have also incorporated a set of timber structure elements into the interior design. It serves as a metaphor for traditional architectural structures while also functioning to delineate spaces. Moreover, the timber components themselves have been endowed with practical significance: they integrate lighting circuits, serve as tracks for sliding doors, and form the structure of display shelves. The third floor's multifunctional space, due to its lower ceiling height, tends to feel oppressive. By combining the timber structure elements with mirrored materials, we dissolve the perception of spatial boundaries. Upon entering, the interplay between the reflection and the real creates a sense of harmony between ideals and reality.
經(jīng)過兩個多月的緊張施工,餐廳如期落成營業(yè)。由于旅游景區(qū)管理嚴格、用地周邊鄰里關系繁雜,施工落地過程充滿挑戰(zhàn)。不得不說,項目能在這么短的時間內落地,少不了業(yè)主的支持,施工方的付出以及鄰居的理解配合。可喜的是,項目落成之后,我們通過業(yè)主了解到食客對用餐環(huán)境廣泛好評,這是我們作為設計師最欣慰的事情。
After over two months of intensive construction, the restaurant was completed and opened on schedule. The construction process was filled with challenges due to the strict management of the tourist area and the complex relationships with neighboring landowners. It is worth mentioning that the project was able to be completed in such a short period of time thanks to the support of our client, the efforts of the construction team, and the understanding and cooperation of the neighbors. Fortunately, after the project was completed, we learned from the client that the diners have widely praised the dining environment, which is the most gratifying thing for us as architects.
