由BUZZ主導(dǎo)設(shè)計的最新建筑改造及室內(nèi)設(shè)計項目——南京鼓樓錦上OCC餐廳于去年底正式營業(yè)。它始于2023年中,歷時1年。BUZZ希望能將它改造成一處鼓樓旁的新地標(biāo),一種重新被定義的綜合餐飲業(yè)態(tài),一個全新的南京城市人文會客廳,以重現(xiàn)南京鼓樓旁記憶中人文匯聚的繁盛場景。
The newly constructed architectural renovation and interior design project led by BUZZ—Jinshang OCC Restaurant at The Nanjing Drum Tower—officially opened at the end of last year. It began in mid-2023 and took a year to complete. BUZZ aims to transform it into a new landmark next to the Drum Tower, a redefined comprehensive dining concept, and a brand-new urban cultural salon for Nanjing, in order to recreate the prosperous scene of cultural gathering that is remembered next to the Nanjing Drum Tower.
01
場地厚度和設(shè)計回應(yīng)
錦上OCC所屬的這片場地,對于我們來說,像是一個美麗的巧合,有著一種無法推拒的吸引力:它位于南京鼓樓的一旁,它之于南京鼓樓的距離,恰恰是BUZZ北京辦公室之于北京鼓樓的距離。雖然尺度關(guān)系不盡相同,但一南一北,卻有一種很強(qiáng)的通感。
The site where Jinshang OCC is located is, for BUZZ, like a beautiful coincidence with an irresistible appeal: it is situated right next to Nanjing's Drum Tower, and the distance from it to the Drum Tower is exactly the same as the distance from BUZZ's Beijing office to Beijing's Drum Tower. Although the scales are not entirely the same, being one in the south and one in the north, there is a strong sense of resonance between them.
扎根于“鼓樓”腳下的這一群人,對鼓樓有一種特殊的感情。每日處在同一片區(qū)內(nèi),由一個富有歷史意義的古老建筑所帶來的人文關(guān)懷,是潤物無聲的,于人們更像是一種氣息或是能量的呼應(yīng)。
BUZZ is a group of people rooted at the foot of the "Drum Tower," and we have a special affection for it. Being in the same area every day, the humanistic care brought by an ancient building with historical significance is subtle and silent, like a kind of breath or energy that resonates with people.
南京是一個非常低調(diào)且人文屬性豐富的城市,秦淮河畔六朝古都的歷史積淀,使它成為人文匯集的高文化密度的地方。很多南京人對鼓樓這片區(qū)域有屬于自己的獨特記憶,南京大學(xué)生根于這個地方,東南大學(xué)而后相伴,原有的OCC也曾是鼓樓區(qū)有名的咖啡廳,一個人人知曉的文化聚集地。
Nanjing is a very low-key city with rich cultural attributes. The historical accumulation of the six dynasties along the Qinhuai River makes it a place with a high cultural density where humanities gather. Many Nanjing residents have their own unique memories of the Drum Tower area. Nanjing University is rooted in this place, and Southeast University has been accompanying it ever since. The original OCC was also a famous café in the Gulou district, a cultural gathering place known to everyone.
建筑近處豐茂的樹冠,室內(nèi)斑駁婆娑的樹影,遠(yuǎn)處鼓樓的紅墻依稀從枝葉間透進(jìn)視線之中;耳畔繁華的車水馬龍,更替著紫峰大廈的前景。這樣一種人文與自然疊加出的場地厚度,是對我們最大的吸引。
The lush tree canopies close to the building, the mottled and graceful shadows of trees inside, and the faint sight of the red walls of the Drum Tower through the branches; the bustling traffic and the changing foreground of the Zijin Tower. Such a site with a depth of humanities and nature superimposed is the greatest attraction to us.
在這樣一個城市文化地標(biāo)的輻射范圍內(nèi)去完成一個項目,我們試圖應(yīng)對的,是如何回應(yīng)這種飽滿的場地能量,對新生于這片場地的建筑能有一定的把握和控制,既要能夠彰顯它的特性,不拘泥于形式層面的操作,但又盡可能更低調(diào)、更內(nèi)斂。
Under its influence of such an urban cultural landmark, what BUZZ attempts to address is how to respond to the rich energy of the site, and to have a certain grasp and control over the new architecture that emerges from it. It should be able to highlight its characteristics without being confined to merely formal operations, yet at the same time, it should be as low-key and restrained as possible.
所以設(shè)計更多的是通過空間視角,來獲取人與場域之間的體驗關(guān)聯(lián),希望來到這里的人,能夠迅速回望某個輝煌燦爛的片刻,使這個文化匯聚之地得到新的傳承和再生,形成新的場域之力。
Therefore, the design focuses more on the spatial perspective to establish an experiential connection between people and the site. The hope is that those who come here can quickly recall a moment of brilliance, allowing this cultural gathering place to gain new inheritance and regeneration, forming a new force of the site.
02
非常規(guī)化的體驗場景
場地現(xiàn)存的是一棟小尺度的建筑,如果按照標(biāo)準(zhǔn)定義,錦上OCC是一個針對餐飲空間的建筑改造及室內(nèi)設(shè)計項目。但在這樣的場景下,地塊本身的能量卻又是常規(guī)設(shè)計手法無法應(yīng)對的,任何一種片面的文化符號或形式的出現(xiàn)都顯得蒼白和不必要。故此,這個餐廳又是非常規(guī)的。
The existing site features a small-scale building. If defined by standard terms, Jinshang OCC is a renovation and interior design project for a dining space. However, in this context, the energy of the plot itself is something that conventional design methods cannot address. The appearance of any one-sided cultural symbol or form would seem pale and unnecessary. Therefore, Nanjing Gulou Jinshang OCC Restaurant is unconventional.
所以,我們首先消解的是它作為室內(nèi)項目的屬性,更多去吸納、去對話,把外部的人文氣質(zhì)、自然環(huán)境、體驗氛圍引入到場地內(nèi)。它更像一個景觀設(shè)計,弱化了室內(nèi)設(shè)計的同時也消解了建筑立面,讓景觀滲透進(jìn)來,變成室內(nèi)空間的一部分。
Thus, BUZZ first dissolves its attribute as an interior project, focusing more on absorbing and engaging with the external cultural atmosphere, natural environment, and experiential ambiance, bringing them into the site. It is more like a landscape design, weakening the interior design while also dissolving the architectural facade, allowing the landscape to permeate and become part of the indoor space.
同時,我們也從某種意義上弱化傳統(tǒng)餐飲空間的痕跡,把它打造成一個結(jié)合了多重體驗的沙龍,一種以餐飲作為基底的、更符合當(dāng)代人生活方式的復(fù)合運營空間,一個被重新定義的新一代餐飲空間。它首先應(yīng)該是和城市充分融合的。人們對于餐飲空間的體驗和閱讀,本質(zhì)上也是對于城市的體驗和閱讀。
At the same time, it also, to some extent, weakens the traces of traditional dining spaces, transforming it into a salon that combines multiple experiences. It is a new generation of dining space that is redefined, with dining as the foundation, and more in line with the lifestyle of contemporary people as a compound operational space. It should first be fully integrated with the city, and people's experience and understanding of dining spaces are essentially also an experience and understanding of the city.

傳統(tǒng)空間的當(dāng)代轉(zhuǎn)譯
這片場地的魅力,還來自于其豐富的場景元素和區(qū)域?qū)哟危簭囊惶帤v史建筑,漫步到一片繁華的城市核心街區(qū),穿過一個生長著茂盛植物的城市公園,才能來到這棟建筑前。鼓樓的安靜、交通的喧鬧、周邊辦公樓里年輕人的忙碌、街角公園里老人的悠閑,全部雜糅在一起。所以,為回應(yīng)這一有趣的過渡,建筑從外而內(nèi)是通過空間動作來完成一種緩步的滲透,或者說是一種過濾。
The charm of the Gulou OCC site also comes from its rich scene elements and regional layers. Starting from a historical building, one strolls through a bustling urban core district, passes through a city park filled with lush vegetation, and finally arrives in front of this building. The tranquility of the Drum Tower, the noise of traffic, the busyness of young people in the surrounding office buildings, and the leisure of the elderly in the street corner park are all blended together. Therefore, to respond to this interesting transition, the building, from the outside in, completes a gradual permeation or filtration through spatial movements.
這一系統(tǒng)是類似于傳統(tǒng)園林一樣的有著若干層次的空間形態(tài),從開放性的城市公共空間,到內(nèi)部可以游走的墻院,從室內(nèi)開放的就餐區(qū),到墻身遮掩后一個個獨立餐臺形成的“洲島”,它們是一個個連續(xù)的界面,是“園中園”“院中院”一樣具有層層嵌套和過渡關(guān)系的完整體系。這些也是對于傳統(tǒng)空間原型的一種基于當(dāng)代商業(yè)運營和當(dāng)代人可感知的體驗感的轉(zhuǎn)譯。
This system is similar to traditional gardens, featuring several layers of spatial forms. From the open urban public space to the internal courtyards that allow for movement, from the open dining area indoors to the "islands" formed by individual dining tables hidden behind walls, they are a series of continuous interfaces, a complete system with nested and transitional relationships like "garden within a garden" and "yard within a yard." These are also a translation of traditional spatial prototypes based on contemporary commercial operations and the perceptible experience of contemporary people.
受原有建筑的影響,項目的天花是較普通新建餐廳更低矮的。所以首層立面幾乎是全“開敞”的、通透的,盡可能拉通室內(nèi)和室外的視線關(guān)聯(lián),以減弱垂直向高度帶來的壓抑感,人也可以隨時走出去。
Influenced by the original building, the ceiling of Gulou OCC is lower than that of ordinary newly built restaurants. Therefore, the facade of the first floor is almost entirely "open" and transparent, maximizing the visual connection between the interior and the exterior to reduce the sense of oppression brought by the vertical height, allowing people to step out at any time.

消融的邊界
建筑跟景觀相連的部分,通過一系列墻體的轉(zhuǎn)折,形成新的立面形式,將外部的景觀和建筑進(jìn)行銜接和綁定,它也同時產(chǎn)生了外部人員到來到場地內(nèi)的引導(dǎo)關(guān)系。
The part of the building that connects with the landscape forms a new facade through a series of wall turns, linking and binding the external landscape with the architecture. It also creates a guiding relationship for external visitors to enter the site.
片墻是中國傳統(tǒng)園林空間里的重要建筑元素。而在鼓樓OCC中,它既是立面元素,也是景觀元素,是具有雙重過渡的空間要素和使用場景。由于公園地形的逐漸抬升,墻體本身保持相對低矮的形態(tài),隨著踏步往上形成層層跌落、層層遞進(jìn)的底層立面形式。
The partition wall is an important architectural element in traditional Chinese garden spaces. In Gulou OCC, it serves both as a facade element and a landscape element, acting as a dual transitional spatial element and usage scenario. Due to the gradual elevation of the park's terrain, the wall itself maintains a relatively low profile. As steps lead upwards, they create a layered and progressive facade form.
由片墻圍合成的院子,是具有強(qiáng)烈室內(nèi)化特征的建筑外部空間。所以,通常在做院子營造的時候,很多室內(nèi)的材料會被沿用到院子之中,來創(chuàng)造將室內(nèi)氛圍搬到室外的感受。首層的三維空間層次,形成了豐富的光影變化,也相應(yīng)導(dǎo)入了更多元的景觀元素,把現(xiàn)有的樹木和場地氛圍一并帶入到建筑立面甚至室內(nèi)的范疇之內(nèi)。
The courtyard enclosed by partition walls is an architectural external space with strong indoor characteristics. Therefore, when creating courtyards, many indoor materials are often used in the courtyard to create a feeling of bringing the indoor atmosphere outdoors. The three-dimensional spatial layers of the first floor form rich light and shadow changes, and also introduce a more diverse range of landscape elements, incorporating the existing trees and site atmosphere into the scope of the building facade and even the interior.
這樣的處理,也在無形之中弱化了建筑、室內(nèi)、景觀三重關(guān)系的邊界,使得原來相對獨立甚至對立的關(guān)系變得融洽。完整的建筑立面轉(zhuǎn)化成了一個消解的表皮,它掩映在樹林之間,和人們從室內(nèi)看到鼓樓的畫面一樣。同時由于樹木的存在,原本橫向的立面也被拆解成一系列有故事性的片段集合。
Such treatment also subtly weakens the boundaries between architecture, interiors, and landscape, making what was originally a relatively independent or even opposing relationship more harmonious. The complete building facade is transformed into a dissolving skin, hidden among the trees, just like the view of the Drum Tower seen from indoors. At the same time, due to the presence of trees, the originally horizontal facade is also broken down into a series of narrative fragments.

表皮中的“厚度”
二層以上的空間基本多是獨立的包間,由于既有的結(jié)構(gòu)所限,包間的操作方式同樣是將人們的視覺盡可能向外引導(dǎo),將窗口面積盡可能放開。同時為保證功能性和私密性,窗口的一半選取了一種非?!吧Ⅻc敘事”化的手段遮蔽。由一層扭轉(zhuǎn)拼接的陶板和大面積的玻璃窗組合成雙層表皮,將片段化的立面再進(jìn)一步像素化。
The spaces above the second floor of OCC are mostly independent private rooms. Due to the limitations of the existing structure, the approach to these rooms is to guide people's gaze outward as much as possible and to maximize the window area. At the same time, to ensure functionality and privacy, half of the windows employ a very "fragmented narrative" method of shading. A double-layered skin is formed by a combination of twisted and joined terracotta panels on the first floor and large glass windows, further pixellating the fragmented facade.
這種開窗方式也回應(yīng)了傳統(tǒng)花窗的體驗感,有大面積框景的同時又增加了彌散式的景觀滲透。但傳統(tǒng)的花窗多是二維的平面化的表達(dá),陶板的折疊加強(qiáng)的是更空間化的塑造,三維的形態(tài)形成了多層次的空間縱深感,無形之中將外部空間和內(nèi)部空間層次進(jìn)一步疊加,來創(chuàng)造出一種可以被延伸的塊體關(guān)系。
This type of window opening also responds to the experience of traditional lattice windows, offering a large framed view while also allowing for a diffused landscape permeation. However, traditional lattice windows are mostly two-dimensional and planar expressions. The folding of the terracotta panels enhances a more spatialized shaping, with the three-dimensional form creating a multi-layered sense of spatial depth. This subtly superimposes the external and internal spatial layers, creating an extendable block relationship.
大面積開窗的部分框住了花園里落葉喬木豐茂的樹冠。南京其實也是具有多重時間表情的城市,四時變化豐富,冬季飄雪,盛夏酷熱,春秋分明。從室內(nèi)向外觀望,不同季節(jié)景色變化明顯,夏季窗口為樹冠所覆蓋,冬天樹梢間隱隱透出鼓樓的紅色。
The large window areas frame the lush canopies of the deciduous trees in the garden. Nanjing is actually a city with multiple temporal expressions, with rich seasonal changes, snowy winters, scorching summers, and distinct spring and autumn. Looking out from the interior, the scenery changes significantly with the seasons. In summer, the windows are covered by the tree canopies, while in winter, the red of the Drum Tower can be faintly seen through the treetops.
該餐廳屬淮揚(yáng)菜系,是淮揚(yáng)菜大師周曉燕的傳承?;磽P(yáng)菜豐富的食材變化完美的反映了中國傳統(tǒng)餐飲中時節(jié)的重要性,這樣的場景也暗合了淮揚(yáng)菜在四季間變化的食材和它與時間的對話感:畫面不同,菜品不同,體感不同。菜品和空間體驗都不再是單一表情,而是一種綜合場景的集合。
Jinshang OCC Restaurant belongs to the Huaiyang cuisine, a legacy of the Huaiyang cuisine master Zhou Xiaoyan. The rich variety of ingredients in Huaiyang cuisine perfectly reflects the importance of seasons in traditional Chinese dining. This scene also coincides with the seasonal changes in ingredients of Huaiyang cuisine and its dialogue with time: different scenes, different dishes, and different sensations. Both the dishes and the spatial experience are no longer singular expressions, but a collection of comprehensive scenes.
室內(nèi)幾個通高的空間,也開放成了和外部銜接的連續(xù)界面,使得原有被壓抑的層高得到釋放。天臺上的茶室,也是從表皮轉(zhuǎn)折成的頂層空間,使得表皮成為連續(xù)的表皮,但又在空間塑造上區(qū)別于“立面”的概念,或是消解了立面的存在。
Several full-height spaces inside are also opened up to create continuous interfaces with the outside, releasing the previously suppressed ceiling height. The teahouse on the rooftop is a top space formed by the turning of the skin, making the skin a continuous one, but also distinguishing it from the concept of "facade" in spatial shaping, or dissolving the existence of the facade.

空間導(dǎo)向下的室內(nèi)營造
我們目前有近一半的建筑室內(nèi)一體化項目,但一以貫之的是一種建筑視角,基于建筑視角下的室內(nèi)設(shè)計,更偏向于空間的營造,將建構(gòu)的邏輯大量介入到室內(nèi)設(shè)計中,給室內(nèi)空間更多的場景感,而非裝飾感。
Currently, nearly half of BUZZ's projects involve the integration of architecture and interior design. However, a consistent architectural perspective is maintained. Interior design based on this architectural perspective focuses more on the creation of space, incorporating a significant amount of construction logic into the interior design. This approach gives the interior spaces a stronger sense of scene rather than a decorative feel.
OCC餐廳的室內(nèi)營造也是由空間導(dǎo)向,去破除現(xiàn)有建筑層高所帶來的限制,將視線向外引導(dǎo)。室內(nèi)材料也做了相應(yīng)的弱化處理,不再于依靠拼貼的多樣性表達(dá),而注重材料和空間的深度嵌合,在每一個營造體系內(nèi),去創(chuàng)造一種更完整的敘事結(jié)構(gòu),盡可能激發(fā)更多的不同內(nèi)容之間的互動,甚至軟裝的布局也暗含了這一特定的銜接關(guān)系。
The interior creation of the OCC restaurant is also space-oriented, breaking through the limitations imposed by the existing building's ceiling height and guiding the gaze outward. The interior materials have also been treated to be less prominent, no longer relying on the diversity of collage-like expressions. Instead, there is an emphasis on the deep integration of materials and space. Within each creation system, a more complete narrative structure is created, aiming to stimulate more interactions between different content elements. Even the layout of the soft furnishings subtly implies this specific connection.

場景中的時間性
空間把人的感受放大到關(guān)聯(lián)更大、更遠(yuǎn)的城市空間,也收縮到從觀察更細(xì)微的光影變幻去感受時光的流轉(zhuǎn)。消費型空間其實在某種程度上會產(chǎn)生對于時間強(qiáng)烈的回應(yīng),像餐飲、商業(yè)、酒店等,當(dāng)消費時長從2小時延伸到3天,空間所創(chuàng)造的應(yīng)是對應(yīng)不同時間長度的綜合體驗。
Space amplifies people's sensations to connect with larger and more distant urban spaces, while also narrowing down to observing subtle changes in light and shadow to feel the passage of time. Consumer spaces, to some extent, produce a strong response to time, such as in dining, commerce, and hotels. When the duration of consumption extends from 2 hours to 3 days, the space should create a comprehensive experience that corresponds to different lengths of time.
在錦上OCC中,首層的開放就餐區(qū)和咖啡廳,從消費時長大約在2—3小時的就餐時間內(nèi),它有很強(qiáng)的隨機(jī)性,是一種目的性但非絕對目的地的消費方式,所以首層空間提供的是開放性,和外界的城市人文有最直接的聯(lián)通,像一個人來人往、游走感很強(qiáng)的市集。
The open dining area and café on the first floor of OCC, with a consumption time of approximately 2-3 hours for dining, have a strong sense of randomness. It is a purposeful but not an absolute destination for consumption. Therefore, the first floor space provides openness and a direct connection with the external urban culture, like a bustling market with a strong sense of movement.
但二至四層的包間,是一種目的性更明確的“邀請式”消費,甚至四層空間更偏向于接待屬性,目標(biāo)更明確,私密性也更強(qiáng)。但同時這一空間的消費時長也更長,客人利用這一空間喝茶、聊天、娛樂,然后才進(jìn)入就餐環(huán)節(jié),它較底層更具有活動性。當(dāng)時間線被拉長,公共屬性卻在逐層遞減。所以鼓樓OCC的設(shè)置,創(chuàng)造了更多的體驗場景和消費場景,帶給人在不同情境下的不同感受。
However, the private rooms on the second to fourth floors represent a more purposeful "invitation-style" consumption. The fourth floor space, in particular, is more inclined towards reception and has a clearer goal and stronger privacy. At the same time, the consumption duration in this space is longer, as guests use it for tea, conversation, and entertainment before proceeding to the dining phase. It is more dynamic than the lower floors. As the timeline is extended, the public nature decreases with each floor. Thus, the setup of Gulou OCC creates more experiential and consumption scenarios, offering different feelings in different contexts.
隨著時代的變遷,消費訴求也在不斷升級和細(xì)化,短時長消費的小尺度空間也變得更具藝術(shù)性且非常多樣。全新的消費訴求,在空間形態(tài)上變得可被感知。
As times have changed, consumer demands have also been continuously upgraded and refined. Small-scale spaces for short-duration consumption have become more artistic and diverse. New consumer demands have become perceptible in spatial forms.
我們一直在試圖打破人們固有思維中對某一類型建筑的定義,酒店可以非酒店,餐廳也可以看起來不那么像餐廳,讓空間的吸引力源自于它符合人們某一部分慣常的認(rèn)知,喚醒了自身記憶中某個片段的記憶,但同時又超越了常規(guī)的體驗。
BUZZ has always been trying to break the conventional definitions of certain types of buildings in people's minds. Hotels can be more than just hotels, and restaurants can look less like traditional restaurants, allowing the space's appeal to stem from its alignment with a part of people's habitual cognition, awakening a memory from their own past, yet also transcending the conventional experience.
這樣的操作方式讓新的空間不會特別的違和或是跳脫,但又好像帶來了新的氛圍和感受,既熟悉又神秘。我們是在一種全新的體驗?zāi)J胶瓦壿嫚顟B(tài)下,試圖為每一個項目打造一種特殊化的表情;把空間變得更像一個容器去襯托內(nèi)容,把一種綜合體驗重新打包呈現(xiàn)給受眾。
It does not feel particularly discordant or jarring, but it seems to bring a new atmosphere and sensation, familiar yet mysterious. Therefore, BUZZ is attempting to create a unique expression for each project under a new experiential model and logical state. The space becomes more like a container to highlight the existing content, repackaging a comprehensive experience to present to the audience.
